TIKKA MASALA

This luscious creamy tomato-based sauce is practically England’s national dish. Gently flavored with sweet spices, it’s so good you’ll want to lick the platter clean. Great simmered with grilled or sautéed chicken--simply simmer with stock and cream or coconut milk to make deliciously authentic Chicken Tikka Masala, or try it with paneer cheese for an indulgent vegetarian option.

HOW TO USE:
Sear 1 to 1¼ lb cubed boneless chicken thighs or ¾ lb paneer in 2 tbsp oil.  Add the sauce. Use 2-4 tbsp chicken stock or water to rinse out any sauce remaining in the jar and add. For a more luscious sauce add ¼ cup cream or coconut milk. Simmer till cooked through. Taste for salt and stir in a pat of butter just before serving. Enjoy hot with naan, rice or crusty bread. Serves 3.

TIP: Also great with tofu, shrimp, fish and vegetables.

This Portuguese-influenced sauce from Goa combines “vin” (vinegar) and “alhos” (garlic) with aromatic spices to result in a robust, mouth-wateringly spicy dish.

HOW TO USE:
