TIKKA MASALA

This luscious creamy tomato-based sauce is practically England’s national dish. Gently flavored with sweet spices, it’s so good you’ll want to lick the platter clean. Great simmered with grilled or sautéed chicken--simply simmer with stock and cream or coconut milk to make deliciously authentic Chicken Tikka Masala, or try it with paneer cheese for an indulgent vegetarian option.

HOW TO USE:
Sear 1 lb cubed boneless chicken thighs or ¾ lb paneer in 2 tbsp oil.  Add the sauce. Use 2-4 tbsp chicken stock or water to rinse out any sauce remaining in the jar and add. For a more luscious sauce add ¼ cup cream or coconut milk. Simmer till cooked through. Taste for salt and stir in a pat of butter just before serving. Enjoy hot with naan, rice or crusty bread. Serves 3.

TIP: Also great with tofu, shrimp, fish and vegetables.

VINDALOO

This Portuguese-influenced sauce from Goa combines “vin” (vinegar) and “alhos” (garlic) with aromatic spices to result in a robust, mouth-wateringly spicy dish.

HOW TO USE:
Sear 1½ lbs of cubed boneless chicken thighs or sweet potatoes in 2 tbsp oil. Add the sauce. Use ¼ cup chicken stock or water to rinse out any sauce remaining in the jar and add. Simmer till cooked through. Taste for salt, and enjoy hot with crusty bread or rice. Serves 4.

This is my mother-in-law’s secret recipe for authentic Punjabi chickpeas, flavored with tea, whole spices and pomegranate seeds in a piquant sauce.

HOW TO USE:
Combine sauce with 2½ cups canned chickpeas (rinsed and drained). Use ½ cup water to rinse out any sauce remaining in the jar and add. Simmer for 7-10 minutes. Taste for salt and garnish with fresh cilantro (optional). Enjoy hot with rice or naan. Serves 4.

TIP: Delicious as a base for chicken, lamb, seafood, egg and vegetable curries.
