My dear friend Pria and Ajit were visiting from Calcutta and I decided to cook up a summer feast for her and serve chilled Lambrusco with it. Dishes that I could prepare from before and serve cold or at room temperature.
Pria is one of my dearest friends in Calcutta. In her house I learnt all my Bengali cooking, from her awesome cook Meenu, whom Pria trained. A trip to Calcutta is not complete without a feast at her place. Pria runs a charming furnishings boutique called Anokhi in Calcutta. Rum (as we fondly call Pria’s daughter), Pontus and Felix (Rum and Pontus’s son) were also there. Ramona is an Environmental Scientist, originally from Calcutta, and Pontus is a musician originally from Sweden.

A dietician once told me to have lots of cucumbers before and while drinking, so now we religiously follow that advice.

Seared scallops with grapefruit and pomelo with a spicy thai dressing
Endive boats with grapes, walnuts and stilton cheese with a white balsamic dressing
