Spicy maple syrup roasted carrots
1 ½ lbs carrot, whole peeled
1 tablespoon Masala Mama Magic Curry powder or Tandoori Masala
½ teaspoon salt
1 tablespoon maple syrup or honey
1 tablespoon olive oil
Cilantro or parsley, chopped
Roasted sunflower seeds (optional)
Heat oven to 400 F
If the carrots are really fat, halve them lengthwise.
Mix the syrup with the Magic curry powder, salt and olive oil.
Mix the carrots with the mixture above. Transfer to a sheet pan with parchment paper.
Lather any left over mixture on top of the carrots. Bake for 30-45 minutes till cooked through and caramalized.
Can serve warm or at room temperature.
- Garnish with cilantro and sunflower seeds if using.
