Tikka Naan Pizza with squash and chickpeas

Serves 3-4

This is an incredibly easy and delicious pizza. For even easier versions, scroll down.

Ingredients:

3 - 4 plain naan (small to medium sized)
1 delicata squash, cut lengthwise to remove seeds and then and sliced into ½” half-moons
1 15-oz can chickpeas, drained and rinsed
1 jar Masala Mama Tikka Masala Simmer Sauce
½ jalapeno pepper, sliced thin
¼ cup red onion, sliced thin
½ cup Cottage Cheese (try Cowgirl Creamery Clabbered Cottage Cheese)
2 - 3 tablespoons Extra Virgin Olive Oil
1 ½ teaspoons cumin
Salt and pepper
Fresh cilantro leaves for garnish

Method:

  • Preheat oven to 400℉.

  • On a large sheet pan, arrange the sliced delicata squash and chickpeas in a single layer. Drizzle with olive oil and sprinkle with cumin, salt and pepper and roast for 20 - 30 minutes or until the squash is tender and the chickpeas have started to turn golden brown.

  • Lay out naan on a separate sheet pan and brush lightly with olive oil. Top each naan with Tikka Masala Simmer Sauce and layer on roasted squash and chickpeas, sliced jalapenos and red onion.

  • Place naan pizzas back in the oven and bake for 5 minutes, or completely heated through.

  • Dollop clabbered cottage cheese over top of the pizzas and garnish with cilantro leaves to serve.

Tikka Naan Pizza with peppers & onions (or mushrooms & olives)

Serves 3-4

Ingredients:

3 - 4 plain naan (small to medium sized)
1 red bell pepper, sliced, and 1 red onion, sliced
OR
1/2 cup cremini mushrooms, sliced, and a 1/4 cup of calamata pitted olives, sliced
1 jar Masala Mama Tikka Masala Simmer Sauce
2 - 3 tbsp shredded mozzarella cheese per naan
1 - 2 tsp Extra Virgin Olive Oil per naan
Red chili flakes (optional)

(Can substitute sliced mushrooms and sliced black olives for the red pepper and onion)

Method:

  • Preheat oven to 400 F.

  • Place naans (or flatbread) on a sheet pan. Spread some Masala Mama Tikka sauce on top of each naan.

  • Sprinkle shredded mozzarella cheese on top, and layer on sliced red bell pepper and sliced onion, or sliced mushrooms and sliced olives.

  • Drizzle 1-2 teaspoons of olive oil on each pizza. Place sheet pan in the oven and bake for 10-12 minutes.

  • If you like a bit of heat, sprinkle red chili flakes on top. Serve immediately!
