Directions
Heat 1/2 gallon milk in heavy bottom pan over medium-high heat
Stir regularly and let it come to a boil
Turn off heat and add juice of 1 lime
Stir and watch milk curdle
Add more lime if needed until water is no longer milky
Strain out the water in a cheesecloth lined strainer
Transfer paneer in cheesecloth into tofu press
Cover with cheese cloth and place weight on top
Gently lift cheesecloth and paneer onto a chopping board
Cube and use!
