Have some dosa batter staring at you as you open the fridge? Try Mama’s epic Vindaloo Dosa with Roasted Squash & Bell Pepper! It’s an absolute flavor bomb with the sweetness of the squash in perfect contrast to the zing of the luscious Vindaloo sauce. Give it a whirl!

Directions

  1. Heat oven to 400F

  2. Toss sliced squash and bell pepper with olive oil, salt and pepper

  3. Bake till squash is cooked, about 20 minutes

  4. Heat non-stick pan over medium high heat and add 1/2 teaspoon oil

  5. Spread dosa batter and cook for 2 minutes

  6. Spread Vindaloo Sauce

  7. Add squash and bell pepper on half the dosa

  8. Fold dosa carefully and move to a plate
