Directions
Heat oven to 400F
Toss sliced squash and bell pepper with olive oil, salt and pepper
Bake till squash is cooked, about 20 minutes
Heat non-stick pan over medium high heat and add 1/2 teaspoon oil
Spread dosa batter and cook for 2 minutes
Spread Vindaloo Sauce
Add squash and bell pepper on half the dosa
Fold dosa carefully and move to a plate
