vindaloo sloppy joe stuffed sweet potato

Serves 4


4 small sweet potatoes, scrubbed well and pierced with a fork several times
1 lb ground beef
1 jar Masala Mama Vindaloo Simmer Sauce
1 tablespoon ghee, plus extra for coating sweet potatoes
½ red onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 tablespoon brown sugar
Sour cream (optional)
4 green onions, sliced, for garnish
Salt and pepper to taste


1. Preheat oven to 425℉. Place the sweet potatoes on a foil lined baking sheet and rub a small amount of ghee on each one. Bake the sweet potatoes for 45 - 55 minutes or until tender when pierced with a fork.

2. While the sweet potatoes are cooking, heat 1 tablespoon of ghee in a large skillet over medium heat. Sauté the onions and peppers until they start to soften and then add the ground beef to the skillet. Season with salt and pepper and cook until the meat is completely cooked through.

3. Add the brown sugar and Vindaloo Sauce to the skillet and simmer for 2 - 3 minutes.

4. Make a slice in the center of each cooked sweet potato and press the ends together a bit so that the potato forms a little boat. Spoon the Vindaloo Sloppy Joe mixture over the sweet potatoes and garnish with sliced green onions and sour cream if desired.
