This is homestyle vegetarian and plant-based Indian food that I grew up with, in which spices are used with a light hand and oil is used judiciously. I will also share shortcuts and cooking hacks that don't compromise on taste but make cooking quick and easy.

Matar Paneer and Cauliflower-Turmeric Rice
(Bonus: Kachumbartini cocktail)

Matar Paneer
Matar is peas and Paneer is fresh Indian pressed cheese. I also love making this dish with spice-roasted Tofu instead of paneer. Another Punjabi gem, the peas and paneer are cooked in a smooth onion-tomato gravy. It’s super easy to make, delicious and soul-warming.
Ingredients needed:
150 gm Paneer/Tofu
1¼ cup peas
3-4 ripe red tomatoes
1 medium-large onion
1" ginger
3 cloves garlic
Cauliflower – Turmeric Rice
This is my healthy version of lemon rice; it’s bright and slightly crunchy. Works really well with Matar Paneer.
Ingredients needed:
2 cups riced cauliflower (I prefer to get a head of cauliflower and rice it in my food processor. It is fresher and I can control the coarseness, but often when I don't have time I use the riced version)
1-2 lemons
10-15 curry leaves (optional)
¼ cup peanuts/cashew nuts/sunflower seeds
1 small bunch fresh cilantro
Spices needed:
Magic Curry powder*
½ -1 tsp brown mustard seeds
½ tsp cumin seeds
1-2 whole red chillies (optional)
½ tsp turmeric
*Available at MasalaMamaFoods.com, or you can substitute: 1/8 tsp Asafoetida, 1/8 tsp Garam Masala and ¼ heaped teaspoon each of: Coriander, Turmeric and Red Chilli powder.
Kachoombartini Cocktail
As a special treat to ring in the summer, we will end the class by making a Kachoombartini cocktail.
A fun summery cocktail made with a muddled Indian salad (Kachoombar) of cucumber and cilantro with a hint of green chilli.
You need:
Gin
Simple syrup
Lime juice
Cucumber
Cilantro
Green chilli, any kind
A muddler or masher
You can serve it with ice or in a martini glass, as you would like.
If you want to make a non-alcoholic version (a 'shikanji' or Indian lemonade) instead, you will need Club soda or seltzer instead of gin.
