This is homestyle vegetarian and plant-based Indian food that I grew up with, in which spices are used with a light hand and oil is used judiciously. I will also share shortcuts and cooking hacks that don't compromise on taste but make cooking quick and easy.

Saag Paneer and Shortcut Aloo Paratha

Saag Paneer
In this class I will be teaching you how to make Palak Paneer, often referred to as Saag Paneer. Palak is spinach and Paneer is a fresh Indian pressed cottage cheese. This is a super healthy and nutritious dish made with a ton of spinach. It’s velvety in texture and totally delicious.
There are various substitutes for Paneer. Tofu is great; at Kapil’s home they often use corn, and I think roasted carrots, squash or mushrooms would also work.
You need:
1 large bunch spinach, about 200gm (can use frozen)
1 small head broccoli (can use frozen)
1 onion
2-3 tomatoes
Ginger, garlic, green chilli of some sort
One of these: tofu, paneer, mushroom, corn, squash or carrot
Spices: (optional, if you have them) cumin seeds, bay leaves and Garam Masala--but none are imperative

Tip: I use a combination of yogurt and lime juice.
Aloo Paratha
I have been making a really easy and healthy Aloo Paratha using tortillas. Aloo is potato and Paratha is a pan-fried roti or Indian flatbread. Usually it takes a bit of time to make and a lot of oil, but I found a great shortcut: a potato-stuffed roti made with tortillas that is sinfully divine.
Saag Paneer with Aloo Paratha is a heavenly meal!
You need:
8-10 Tortillas (flour, corn or wholewheat) for 4-5 parathas
2-3 potatoes (boiled)
1 onion
Cilantro, green chillies and lime.
