Whole Roasted Masala Cauliflower
Made with Masala Mama’s Magic Curry Powder and baked whole, this magical cauliflower dish looks stunning when served. Really easy to make, crusted with masala, it is crispy on the outside and moist inside.
You need:
1 medium sized cauliflower
1 tbsp Magic Curry powder*
1 lemon
1 small bunch cilantro (preferred) or parsley
1 tsp salt
Oil spray, coconut oil or olive oil
* Available at MasalaMamaFoods.com or you can substitute: ½ tbsp coriander, ½ tsp cumin powder, ¼ tsp turmeric, ¼ tsp red chilli powder, 1/8 tsp black pepper powder
Tomato Pappu and Basmati Rice
An Andhra staple, Tomato Pappu is a South Indian dal (“pappu” means dal)–lentils cooked with a lot of tomatoes and finished with a delicious garlicy South Indian tadka. And I'll demonstrate my foolproof technique for Basmati rice to go with the dal.
You need:
½ cup heaped Toor dal (also called arhar dal or tuvar dal, pigeon pea lentils)
1 cup Basmati rice
2 tablespoons coconut oil or ghee
1 medium sized onion, chopped (approx ½ cup)
3 medium tomatoes, chopped (approx. 1.5 cups) (peeled if possible)
10 to 12 curry leaves
1-2 thai green chili or 1 serrano or ½ jalapeno, chopped (optional)
3 to 4 medium garlic cloves, thinly sliced or chopped
1 scant tsp Masala Dal powder*
½ teaspoon brown mustard seeds
½ teaspoon cumin seeds
Salt as required
* Available at MasalaMamaFoods.com, or you can substitute: 1/8 tsp Asafoetida, 1/8 tsp Garam Masala and ¼ heaped teaspoon each of: Coriander, Turmeric and Red Chilli powder.
