This is homestyle vegetarian and plant-based Indian food that I grew up with, in which spices are used with a light hand and oil is used judiciously. I will also share shortcuts and cooking hacks that don't compromise on taste but make cooking quick and easy.
To take the class, place it in your cart and check out. You will receive a recipe and a Zoom meeting invitation. You can either cook along or make notes while I demonstrate. If you want to cook along, you should have the ingredients prepped as needed before the class.

Beet Chop Burger and Ribboned Zucchini Salad

Beet Chop Burger
Beet chops are cutlets (deep fried patties) that are absolutely irresistible. Unique to Bengal, you find it on the streets along with samosas but also made in most Bengali homes. It is traditionally eaten as a snack with kasundi, a type of mustard. I make a burger with it and it becomes a delicious meal. I also pan sear it instead of deep frying—it’s still amazingly good yet healthy.
Ribboned Zucchini Salad
A delicate and delicious green salad to make you feel virtuous after having too many beet chops! Takes 5 minutes to assemble, and it’s the one of the few ways to make zucchini that I love.
Ingredients needed for the class
For the beet chops:
Beets
Carrots
Potatoes
Peanuts (I can suggest substitutes if you are allergic)
Bread crumbs
Flour
Egg (optional)
Fresh cilantro
Sugar (optional, if needed)
Oil
Spices (that I will send you):
Panch Phoron (a Bengali 5-spice blend)
Cumin seeds
Fennel seeds
Coriander seeds
Red chilli
Garam masala
Amchoor
For the burger:
Buns (I am partial to ciabatta rolls or any other sour dough roll)
Avocado
Arugala
Mustard (strong)
Cheese (very optional)
For the Ribboned Zucchini Salad:
(a vegetable peeler is a must)
Zucchini
A few grape tomatoes (optional)
Lemon
Olive oil
Fresh Parsley or basil
Parmesan Cheese or Nutritional yeast or both
Red chilli flakes
Toasted nuts or seeds (Any of these would work: shaved almonds, pine nuts, sunflower seeds)
