This is homestyle vegetarian and plant-based Indian food that I grew up with, in which spices are used with a light hand and oil is used judiciously. I will also share shortcuts and cooking hacks that don't compromise on taste but make cooking quick and easy.
To take the class, place it in your cart and check out. You will receive a recipe and a Zoom meeting invitation. You can either cook along or make notes while I demonstrate. If you want to cook along, you should have the ingredients prepped as needed before the class.

Chana Masala and Kachumbar Raita

Chana Masala
I’ve yet to have a better chickpea dish than Chana Masala. There are many version of this dish. My favorite is when the chickpeas are smothered with a delicious thick, piquant & spiced gravy. It’s often served with fried bhaturas or had as a chaat. At home we serve it with sliced red onions, lime wedges and ginger slivers pickled in fresh lime juice.
This dish is great with naan, or you can make Aloo parathas. If you want to be sinful, heat up some Malaysian parathas!
You need:
1 large can chickpeas, rinsed well and drained
2 medium onions, chopped
3-4 cloves garlic, crushed
1.5” ginger, grated or mashed (or 1.5 tbsp ginger garlic paste)
1-2 green chillies, chopped (optional)
½ heaped cup crushed tomatoes (1 cup if using fresh)
Spices:
Coriander, cumin, turmeric, red chilli powder, asafoetida (optional), amchur (raw mango powder) or tamarind, garam masala*

Kachumbar Raita
Raita is a yogurt condiment served with Indian food – this version is made with a typical Indian salad called Kachumbar, which is similar to the Mexican pico de gallo. It’s refreshing and a must with a good Punjabi meal. (It can be made with plant based yogurt, or had without yogurt as a salad).
You need:
Yoghurt, whipped till smooth
Tomatoes, diced
Onions, diced
Cucumber, diced
Cilantro, chopped
Roasted cumin powder
Salt
