This is homestyle vegetarian and plant-based Indian food that I grew up with, in which spices are used with a light hand and oil is used judiciously. I will also share shortcuts and cooking hacks that don't compromise on taste but make cooking quick and easy.
To take the class, place it in your cart and check out. You will receive a recipe and a Zoom meeting invitation. You can either cook along or make notes while I demonstrate. If you want to cook along, you should have the ingredients prepped as needed before the class.

Beet Sambar and Green Beans Thoran

Beet Sambar
Sambar is a South Indian dal or lentil dish that is cooked with vegetables, the lovely tart tamarind and a blend of spices unsurprisingly called sambar masala! There are many different types of Sambar. This Beet sambar was taught to me by my godmother Jayashree, who made me a cookbook with all my favorite dishes from her house. Below the Sambar recipe she wrote: “I love shortcuts because I am not hugely excited about cooking!” I’m grateful for her shortcut recipes, and I’m using one of them.
You need:
1 cup toor dal (arhar dal), washed well and soaked in water
2-3 tomato, chopped
2-3 shallots, quartered
1 beetroot, peeled and cubed
2 tbsp tamarind pulp or 1 tsp tamarind paste (can sub tamarind powder*)
1 tsp sambar powder or Spicy Madras Curry powder*
For the tempering:
1 tbsp ghee/oil
1 tsp brown mustard seeds
1 shallot, sliced
10 curry leaves
1 tsp sambar powder or Spicy Madras Curry powder*

Green Beans Thoran
Thoran is a quintessential vegetable stir fry from Kerala that is finished with fresh coconut shavings. It’s fresh, crunchy, delicate, and super healthy.
You need:
1 lb Green Beans, finely chopped into little rings
2 tbsp olive or coconut oil
1 tsp Mustard seeds
10-15 curry leaves
½ tsp crushed red chillies (optional)
Salt
½ cup grated coconut (frozen, if not desiccated)
I would just have perfect Basmati rice with this meal.
